Grilled Glazed Pork Chops

  1. Combine lime juice, ketchup, brown sugar, honey, and red pepper flakes for the glaze in a bowl.
  2. Set aside half the glaze for serving and use the remaining half during grilling.
  3. Trim pork chops of fat.
  4. Rub chops with oil and season with salt and pepper.
  5. Grill chops, covered, over heated side of grill for 3 minutes.
  6. Rotate chops and cook for another 3 minutes.
  7. Flip chops and place over unlit side of grill for 3 mn.
  8. (indirect heat).
  9. Brush chops generously with glaze.
  10. Cook chops until meat reaches an internal temp of 155 degrees; 6-8 mn.
  11. Remove chops from grill; tent with foil and allow chops to reset for 5 mn.
  12. Serve chops with reserved glaze.
