Oatmeal Pancakes
- 2 cups oatmeal
- 1 23 cups plain yogurt
- 13 cup milk
- 12 cup water
- 12 cup whole wheat flour
- 2 eggs, slightly beaten
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 14 teaspoon salt
- 2 tablespoons sugar
- Note: can substitute 2 cups buttermilk for the yogurt and milk.
- Original directions: Combine first 4 ingredients and refrigerate overnight.
- The next morning, add eggs and dry ingredients to oatmeal mixture.
- Alternate directions: Process dry oatmeal in food processor.
- Add rest of dry ingredients and process for 30 seconds.
- Mix all wet ingredients in large bowl and then add the dry processed ingredients.
- No need to make ahead and refrigerate.
- Preheat griddle well and spray with no stick spray.
- Use 1/3 cup of batter for each pancake.
