Half Moon Potato Pie Recipe
- 1 1/2 c. all purpose flour
- 2 tbsp. sugar
- 1/4 c. lowfat milk
- 1/4 c. butter
- 1/2 teaspoon nutmeg
- 2 tbsp. Crisco
- 1/4 teaspoon baking pwdr
- 4 med. sweet potatoes
- 1 teaspoon cinnamon
- Sift flour and baking pwdr together then add in sugar and cut Crisco into mix.
- Add in just sufficient lowfat milk to dampen dough.
- Knead dough a few min and divide into 6 equal pcs.
- Set aside.
- Thoroughly mash boiled sweet potatoes adding sugar, butter, cinnamon, and nutmeg.
- Whip to remove lumps and strings.
- Then roll each piece of dough to a pie-crust thinness and about 8 inch diameter on a floured surface.
- On each piece, place generous amount of sweet potatoes mix on one half then flip over and crimp edges with fork to close.
- Bake on greased cookie sheet in 350 degree oven for 20 to 25 min.
- (Note: May be sprinkled with sugar and cinnamon before baking.)
