Quick and Easy Gazpacho

  2. After chopping all the veggies, put them in a bowl and mix them all up.

  4. Pour the V-8 juice on top and its ready to serve!

  6. If youre not going to eat it that day, keep the veggies in one container and just take a portion and add some V-8 over the top whenever you want a mug of healthy soup with no soggy veggies!
  7. Chopped cilantro, scallions, or tomatoes are also great additions to this easy no-cook soup!
