Orange-Basil Salmon
- 1/4 cup fresh orange juice
- 2 tbsp. fresh lemon juice
- 2 tbsp. olive oil
- 1/3 cup chopped fresh basil
- 2 tsp. grated orange rind
- 6 1-inch thick salmon steaks
- Combine first 5 ingredients in a large shallow dish or zip-top plastic bag; add salmon.
- Cover or seal, and chill 2 hours.
- Remove salmon from marinade, discarding marinade.
- Grill, covered with grill lid, on a lightly greased food rack over medium-high heat (350F to 400F degrees) 10 minutes on each side or until fish flakes easily with a fork.
