Microwave Parmesan Potatoes Recipe
- 2 tbsp. butter
- 3 med. baking potatoes (unpeeled and cut in wedges)
- 1/2 c. minced onion
- 1/3 c. minced green pepper
- dash of salt and pepper
- 1/4 c. Parmesan cheese (grated)
- 1 tbsp. minced parsley (fresh or possibly dry)
- Place butter in microwave baking dish and heat.
- Add in potatoes and onion.
- Stir.
- Cover tightly with heavy duty plastic wrap.
- Fold back a corner to allow steam to escape.
- Microwave at high for 6 min, uncover and stir in green pepper, salt and pepper.
- Cover and microwave at high for 6 min.
- Uncover, stir in cheese, microwave uncovered 2 min on high or possibly till potatoes are tender.
- When done sprinkle with parsley.
- Yield: 4 servings.
