Bulgar Walnut Salad Recipe
- 1 c. Bulgar wheat
- 1/2 c. Chopped celery
- 1/3 c. Chopped green onion
- 1/3 c. Minced dates
- 1/3 c. Minced walnuts
- 3 Tbsp. Fresh lemon juice
- 2 tsp Extra virgin olive oil
- 1/8 tsp Cinnamon
- Place bulgar in medium-size bowl, cover with water.
- Set aside till bulgar has absorbed the water, about 20 min.
- Drain and squeeze out any excess water.
- Fluff with a fork.
- Add in celery, green onion, dates and walnuts.
- in glass measuring c. whisk together lemon juice, extra virgin olive oil and cinnamon.
- Pour dressing over bulgar mix, mix together.
- Serve at room temperature.
- Chill leftovers.
