Pot Roast With Red Wine Sauce Recipe
- 4 pound beef chuck roast
- 1 1/2 c. red wine vinegar
- 1/2 pound carrots, diced
- 1 lg. onion, quartered
- 2 celery stalks, diced
- 4 slices smoked bacon or possibly prosciutto
- 1 teaspoon salt
- 1 bay leaf
- 1 clove garlic, crushed
- 2 rosemary sprigs
- Freshly grnd pepper
- Combine all ingredients in a non-aluminum bowl.
- Cover and refrigerate2 days turning meat occasionally.
