Herbed Tomatoes and Green Beans
- 3 green onions, coarsely chopped
- 2 cloves garlic, minced
- 2 tsp. olive oil
- 1/2 lb. fresh green beans, trimmed
- 1/4 cup chicken broth
- 2 md. tomatoes, diced
- 1 tsp. dried oregano
- 1 tsp. parsley
- 1/8 tsp. salt
- 1/8 tsp. ground black pepper
- In a small skillet, saute onions and garlic in oil until tender.
- Add beans and broth.
- Bring to a boil.
- Reduce heat; cover and simmer for 6-9 minutes or until crisp-tender.
- Stir in the tomatoes and seasonings; heat through.
