Beans And Pasta Recipe
- 1 lrg onion, sliced
- 1 sm red bell pepper, cut into thin strips
- 1 sm yellow bell pepper, cut into thin strips
- 2 x cloves garlic
- 2 Tbsp. extra virgin olive oil
- 1 x 8 ounce pkg sliced fresh mushrooms
- 2 x 14.5 ounce cans Italian-style diced tomatoes
- 1 x 15 ounce can black beans, rinsed & liquid removed
- 1 x 15.25 ounce can kidney beans, rinsed & liquid removed
- 1 x 3.5 ounce can capers, liquid removed
- 1 x 2.25 ounce can sliced ripe olives, liquid removed
- 1/4 tsp salt
- 1/2 tsp pepper
- 8 ounce angel hair pasta, cooked
- 1/3 c. feta or possibly shredded Parmesan cheese
- Saute/fry first 4 ingredients in warm oil in a large skillet over medium-high heat 3 min; add in mushrooms and saute/fry 4 min.
- Stir in diced tomatoes and next 6 ingredients; bring to a boil.
- Reduce heat and simmer, stirring occasionally, 25 min.
- Serve over pasta and sprinkle with cheese.
