Ham Pot Pie Recipe
- 4 to 5 med. sized potatoes
- Ham slice (approximately 1 1/2 lb.), diced in 3/4 inch squares
- 1 pie crust stick
- Peel potatoes and cut into bite sized pcs and boil in 4 qt pot.
- After potatoes have boiled for approximately 10 min, drain water and add in fresh (gets rid of the starch floating on the water), and add in diced ham.
- Make pie crust, following directions on back of pie crust box.
- Roll out pie crust and cut into 1 inch squares.
- When boiled potatoes feel soft to touch with a fork, reduce heat to medium, add in pie crust squares, spreading proportionately over top of potatoes and ham, stirring in gently.
- When liquid mix begins to thicken, remove from heat and serve.
- The thicker the better.
- Leftovers: Add in small amount of water and cook at low heat, stirring occasionally to keep from sticking to pot.
- As liquid thins, small amounts of water may be added and heat increased.
