Meaty Stuffed Poblanos
- 8 ounces, weight Ground Beef
- 2 cloves Garlic, Minced
- 1/2 teaspoons Cayenne
- 1 whole Medium Tomato, Chopped
- 1/2 cups White Onion, Chopped
- 1 whole Jalapeno, Diced (stem And As Many Seeds Removed As Desired For Heat)
- 4 whole Poblano Peppers
- 8 Tablespoons Mozzarella, Shredded
- In a large skillet over medium heat, brown the ground beef, garlic and cayenne until beef is brown and crumbly.
- Add the tomato, onion and jalapeno (I didnt remove the seeds when dicing; you wont notice theyre there, I promise).
- If you want some heat, add another half or whole jalapeno to the mixture.
- Cook the mixture for about 3 minutes.
- Remove from heat.
- Preheat oven to 350 F. Slice poblanos in half lengthwise and remove seeds.
- Coat a small baking dish with non-stick spray.
- Stuff poblanos with meat mixture and place them in the baking dish with the filling side facing up.
- Sprinkle a tablespoon of mozzarella over each poblano half.
- Bake for 15 minutes then remove dish from the oven.
- Poblanos will still be firm.
- You dont want a soft pepper.
- Serve with salsa and jalapeno slices.
