Potato-Leek Vinaigrette

  1. Wash leeks and slice into 1/2 inch pieces.
  2. Drop into boiling water.
  3. Cook for 5 minutes, drain and set aside to cool.
  4. Cut potatoes into 1 1/2 inch chunks.
  5. Drop into boiling water and cook until tender, but firm.
  6. Drain and set aside.
  7. Slice the bell pepper into 1 inch strips.
  8. Whisk together the vinaigrette ingredients.
  9. Combine leeks, potatoes and peppers.
  10. Pour vinaigrette over and toss.
  11. Chill before serving.
