Chicken Balls
- 6 c. ground cooked chicken breast
- 3/4 c. oats (uncooked)
- 2 eggs, slightly beaten
- 1 Tbsp. brown sugar
- 1/2 tsp. ground cloves
- vegetable oil
- 15 to 20 whole cloves
- 1/3 c. brown sugar
- 2 Tbsp. cornstarch
- 1 c. cold water
- 2 c. pineapple juice
- 1/4 c. lemon juice
- Combine first 5 ingredients, mixing well; shape into 1-inch balls.
- Fry in a small amount of hot oil over medium heat until brown.
- Drain on paper towels.
- Tie whole cloves in cheesecloth and set aside.
- Combine 1/3 cup brown sugar and cornstarch in a large saucepan.
- Gradually add water, stirring until smooth.
- Add pineapple juice and lemon juice; cook, stirring constantly, until smooth and thick.
- Add meatballs and whole cloves.
- Simmer on low 30 minutes, stirring occasionally. Remove cheesecloth bag.
- Makes 4 1/2 dozen.
