Junior League - Mexican Rice
- 1 12 cups rice
- 2 tablespoons vegetable oil
- 3 tomatoes, chopped
- 1 onion, chopped
- 1 jalapeno chile, chopped
- 2 teaspoons cumin seeds
- 12 teaspoon garlic powder
- 12 teaspoon pepper
- fresh cilantro
- minced bell pepper
- carrot
- 3 cups boiling water
- Saute the rice in oil until golden brown.
- Stir in tomatoes, onion, jalapeno, cumin, garlic, pepper, cilantro, bell pepper, carrots.
- Add water, reduce and simmer.
- Cook covered for 15 minutes or until liquid is adsorbed and the rice is tender.
- Remove from heat.
- Let stand before serving.
