Junior League - Mexican Rice

  1. Saute the rice in oil until golden brown.
  2. Stir in tomatoes, onion, jalapeno, cumin, garlic, pepper, cilantro, bell pepper, carrots.
  3. Add water, reduce and simmer.
  4. Cook covered for 15 minutes or until liquid is adsorbed and the rice is tender.
  5. Remove from heat.
  6. Let stand before serving.
