Chicken Club Sandwiches Recipe

  1. Preheat broiler.
  2. In small bowl, combine mayonnaise, relish, lemon juice and pepper; set aside.
  3. Place chicken on broiler rack; broil 4 inches from heat 7 min.
  4. Turn chicken over; place one bacon slice on top of each chicken breast.
  5. Broil 2 to 3 min longer, till bacon is crisp and chicken is no longer pink.
  6. Remove bacon from chicken; cold chicken and bacon slightly.
  7. Spread mayonnaise mix proportionately on each slice of toast.
  8. To assemble each sandwich, layer one slice of toast with a lettuce leaf, two slices tomato, 1 slice bacon, another slice of toast, lettuce, chicken, lettuce and a third slice of toast.
  9. Cut in half diagonally and garnish with olives, pickles and carrots, if using.
  10. Makes 4 servings.
  11. Each serving provides: 1 FA, 2 P, 2 V, 1 1/2 B, 40 C. Per serving: 296 cal, 29 g pro, 8 g fat, 33 g car, 615 mg sod, 62 mg chol.
