Potatoes Tarka (Potatoes with Cumin Seeds)

  1. Place potatoes in large saucepan with enough salted water to cover.
  2. Bring to a boil; reduce heat, and simmer 5 minutes, or until potatoes are tender.
  3. Drain well.
  4. Heat oil in nonstick skillet over medium-high heat.
  5. Add cumin seeds, and cook 15 seconds, or until fragrant and brown.
  6. Stir in potatoes, salt and pepper.
  7. Adjust seasonings, and serve immediately.
