Easy Coconut Cake
- 1 (18 1/2 ounce) box white cake mix
- 3 egg whites (or as called for by your cake mix)
- 13 cup oil (or as called for by your cake mix)
- 1 13 cups water (or as called for by your cake mix)
- 1 (8 1/4 ounce) can crushed pineapple, drained
- 1 12 cups white icing
- 1 12 cups shredded coconut
- Make cake as following directions on box.
- Pour into two 9-inch round cake pans.
- Bake at 350F for 28-30 minutes.
- Cool on wire racks.
- Drain pineapple well - put on top of one layer - then put some of the icing on top of pineapple.
- Put the two layers together.
- use the remaining frosting all over the cake.
- Cover the entire cake with coconut.
