Crisp Asparagus in Oyster Sauce

  1. Bring chicken broth to a rapid boil.
  2. Add oil and asparagus.
  3. Cook in broth for about 2 minutes.
  4. Turn off heat.
  5. Let asparagus remain in the broth while you prepare the sauce.
  6. Heat chicken or duck fat in a small saucepan.
  7. Stir in sauce mixture and cook over low heat until it foams.
  8. Add sesame seed oil.
  9. Turn off heat.
  10. Drain asparagus and arrange on a serving platter.
  11. Pour sauce over asparagus.
  12. Serve hot.
