Shrimp In Spicy Sauce Recipe
- 4 teaspoon serrano or possibly jalapeno chilies, seeds removed, minced fine
- 1/2 c. onions, minced fine
- 1/2 c. celery, minced fine
- 2 tbsp. oil
- 4 tomatoes, peeled & minced
- 1 bay leaf
- 1 tbsp. parsley, minced fine
- 1 teaspoon sugar
- Salt & pepper to taste
- 2 pound raw shrimp, peeled & deveined
- Warm cooked rice
- Grated Parmesan cheese
- Saute/fry the chilies, onions and celery in oil till the onions are soft.
- Add in the tomatoes, bay leaf, parsley, sugar, salt and pepper; cook till most of the liquid has evaporated and the sauce is quite thick.
- Reduce the heat, add in shrimp, cover and simmer about 10 min, being careful not to overcook.
- Serve over rice, with Parmesan cheese.
- Makes 4-6 servings.
