Chocolate Mini Fruit Pizzas

  1. Combine butter and sugar in bowl.
  2. Beat at medium speed until creamy.
  3. Add egg yolk and vanilla; continue beating until well mixed.
  4. Add flour and cocoa; beat at low speed just until dough forms.
  5. Shape dough into 7x2-inch log.
  6. Wrap in plastic food wrap.
  7. Refrigerate at least 1 hour or freeze 30 minutes.
  8. Heat oven to 375 degrees F.
  9. Cut log into 1/4-inch slices with sharp knife.
  10. Place 2 inches apart onto ungreased baking sheets.
  11. Bake 7-9 minutes or until set.
  12. Cool on baking sheets 2 minutes; remove to cooling rack.
  13. Cool completely.
  14. Frost each cookie with 2 teaspoons chocolate frosting.
  15. Top with fruit.
  16. Serve immediately or cover and serve within 2 hours.
