Spicy Garden Tortellini
- 9 ounces, weight Fresh Spinach And Cheese Tortellini
- 1/4 cups Extra Light Olive Oil
- 2 teaspoons Minced Garlic
- 2 teaspoons Sea Salt
- 1/2 teaspoons Black Pepper
- 1 whole Green Zucchini, Sliced Thin
- 1 whole Yellow Zucchini, Sliced Thin
- 1 whole Sweet Onion, Sliced Thin
- 10 ounces, weight Rotel "Hot" With Habanero Peppers
- In a large sauce pan, cook pasta according to package directions.
- While pasta is boiling, saute olive oil, garlic, salt and pepper in a deep skillet over medium high heat for 2 minutes.
- Then add zucchini, onion, and Rotel.
- Cook until pasta is ready and add drained pasta to the skillet.
- Cover and cook on low for 15-20 minutes.
- This can be served as a main dish or as a side.
