Mango-Chile Potato Salad
- 3 lb red potatoes; quartered
- 1/2 cup dried mango; medium dice
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tbsp paprika
- 1/2 cup mayonnaise
- 8 oz Kraft Chipotle Mango dressing
- 1/3 cup rice vinegar
- 1 orange bell pepper; small dice
- 1 red bell pepper; small dice
- 3 shallots; minced
- 1 cilantro; chiffonade
- 1 bunch scallions; cut on bias
- 1 salt and pepper
- Cover potatoes with cold water.
- Add salt.
- Boil until fork tender.
- Drain.
- Cool down in fridge.
- Combine mayo, salad dressing, and vinegar.
- Add dried spices, salt, and pepper.
- Add potatoes, veggies, scallions, and cilantro.
- Toss.
