Becky Sue's BBQ-Baked Bean Sandwich
- 1 each pork and beans (#10 can)
- 3-3/4 cups Cooked beef brisket, medium dice
- 2-1/2 cups Cooked boneless pork loin, shredded
- 2-1/2 cups smoked sausage, casings removed, medium dice
- 2 cups Kraft BarBQ Sauce
- 1-1/4 cups canned peach halves in juice, drained, medium dice
- 1-1/4 cups green peppers, medium dice
- 1 cup yellow onions, medium dice King Sooper's 1 lb For $0.99 thru 02/09
- 1 cup light brown sugar, lightly packed
- 2 Tbsp. barbecue rub seasoning
- 30 each sandwich buns (3 oz./85 g), split
- Combine all ingredients except buns in hotel pan or roasting pan.
- Bake, uncovered, in 250 degrees F (120 degrees C) standard oven 3 hours, stirring occasionally.
- For each serving: Fill 1 bun with 6 oz.
