Everything Soup
- 1 tablespoon olive oil
- 1 12 yellow onions
- 3 garlic cloves
- 4 slices bacon
- 3 cups celery
- 1 red bell pepper
- 1 orange bell pepper
- 1 yellow bell pepper
- 4 carrots
- 1 cup peas
- 1 cup 1% low-fat milk
- 2 12 lbs halibut
- 1 lb salmon
- 1 quart chicken broth
- Heat olive oil in a large heavy stock pot.
- Chop onions and garlic, and brown them in the oil.
- Chop and add bacon.
- Chop and add peppers, celery, carrots.
- Add milk and chicken broth.
- Bring to simmer.
- Add peas, halibut and salmon.
- Simmer for 20 mins or until the fish is cooked.
- Serve, with or without cheddar.
