Betsy'S Microwave Broccoli-Cauliflower Casserole
- 2 (10 oz.) boxes frozen chopped broccoli
- 1 (10 oz.) box frozen cauliflower pieces
- 1 can mushroom soup
- 2 eggs, slightly beaten
- 1 small to medium onion, minced
- 1 tsp. Worcestershire sauce
- 1 c. Cheddar cheese, grated
- 1/4 c. butter or margarine, melted
- 1/2 c. bread crumbs
- Cook and drain vegetables and put into a 2-quart casserole. Mix together the soup, eggs, onion, Worcestershire sauce and cheese, then stir this mixture into the vegetables.
- Combine the melted butter and bread crumbs, then spread this over top of the casserole.
- Bake in microwave at Medium-high for about 15 minutes or until heated thoroughly.
- Makes about 8 servings.
- Can easily be increased or decreased by amount of vegetables.
