Chayote With Pumpkin Seeds

  1. Spray small skillet with cooking spray.
  2. Heat over medium until hot.
  3. Cook pumpkin seeds until they are toasted and begin to pop, 3-5 minutes.
  4. Set aside.
  5. Spray large skillet with cooking spray and saute onions and garlic until tender, 3-5 minutes.
  6. Add squash and cook over medium until squash is crisp-tender, about 20 minutes, stirring occasionally.
  7. Season to taste with salt and pepper.
  8. Spoon squash into serving bowl.
  9. Sprinkle with reserved pumpkin seeds.
