Ambrosia Parfait
- 1 11-ounce can mandarin oranges in water or light syrup, drained
- 1 cup cubed fresh or bottled mango
- 1 8-ounce can pineapple tidbits in their own juice, drained
- 1 medium banana, sliced
- 1/2 cup sliced strawberries
- 1 tablespoon shredded sweetened coconut
- 3 cups fat-free lemon yogurt
- 2 tablespoons dried sweetened cranberries (optional)
- In a medium bowl, stir together the mandarin oranges, mango, pineapple, banana, strawberries, and coconut.
- To assemble, spoon about 1/4 cup yogurt into each parfait glass or small bowl.
- Top each with 1/4 cup fruit mixture.
- Repeat.
- Sprinkle with the cranberries.
- Serve or cover and refrigerate for up to 4 hours.
