Whole Wheat Quinoa Pasta
- 1 box (8 Oz. Size) Whole Wheat Quinoa Pasta
- 1 bunch Swiss Chard
- 2 whole Green Tomatoes
- 3/4 cups Olive Oil
- 4 cloves Garlic
- 1/2 whole Lemon
- 1/2 cups Parmesan Cheese
- Prepare the pasta according to the package instructions.
- While doing this, wash and roughly chop the chard and tomatoes.
- Also, heat the olive oil in a saute pan and add the garlic to the oil.
- Allow it to infuse on low heat for several minutes (be careful not to burn the garlic).
- Drain the pasta, add the chard to the saute pan and the pasta over the chard.
- Also add the tomatoes.
- Toss everything together and let the heat slightly cook the chard.
- The tomatoes should still be nice and fresh (although you could cook them a bit if you want to).
- Squeeze half of a lemon over the pasta and add parmesan cheese to the top.
- Serve hot.
