Mint Brownies
- 1 cup butter, softened
- 2 cups sugar
- 4 eggs
- 1 teaspoon vanilla extract
- 1 14 cups flour
- 34 cup unsweetened cocoa
- 12 teaspoon baking powder
- 1 (10 ounce) package creme de menthe baking chips (Andes)
- shaved creme de menthe thin candies (Andes)
- 12 cup butter, melted
- 13 cup cocoa
- 2 cups powdered sugar, sifted
- 1 teaspoon vanilla extract
- 2 tablespoons milk
- Preheat oven to 350 degrees.
- Grease a 13x9 pan.
- Mix butter and sugar at medium speed until creamy.
- Add eggs one at a time, mixing well after each one.
- Add vanilla and mix well.
- In another bowl, mix flour, cocoa, and baking powder.
- Slowly mix into butter mix.
- Fold in the mint chips.
- Pour into the pan and bake for 35 minutes.
- For the frosting, mix all the ingredients at medium speed until moist.
- Switch to high speed until spreading consistency.
- Cool the brownies and spread with frosting.
- Top with the chocolate shavings.
