Cajun Salmon with Creamy Dressing
- 4 salmon steaks
- 2 teaspoons olive oil
- 1 tablespoon Cajun spice
- 300g can chickpeas, rinsed and drained
- 2 Lebanese cucumbers, finely sliced
- 100g snow peas, blanched, sliced
- 50g snow pea sprouts
- 1/2 red onion, finely sliced
- 1/2 cup coriander leaves, chopped
- 1/3 cup KRAFT FREE* Caesar Dressing
- Brush salmon with oil then coat in the Cajun spice.
- Place onto a preheated grill plate or pan and cook for 3-4 minutes each side over a medium high heat or until cooked to your liking.
- Combine chickpeas, cucumber, snowpeas, sprouts, onion and coriander in a bowl.
- Serve salmon skin side down on a bed of the salad.
- Drizzle with dressing and serve.
