Cajun Salmon with Creamy Dressing

  1. Brush salmon with oil then coat in the Cajun spice.
  2. Place onto a preheated grill plate or pan and cook for 3-4 minutes each side over a medium high heat or until cooked to your liking.
  3. Combine chickpeas, cucumber, snowpeas, sprouts, onion and coriander in a bowl.
  4. Serve salmon skin side down on a bed of the salad.
  5. Drizzle with dressing and serve.
