Chicken and Spinach Crockpot
- 1 12 lbs boneless chicken breasts
- 1 (8 ounce) jar chicken gravy
- 2 medium yellow onions, pureed along with a couple cloves of garlic
- seasoning (I used some onion onion from tastefully simple, I suspect a dry onion soup mix would have worked too)
- 12 cup half-and-half (approx)
- 1 tablespoon cognac (probably could have not used this, but it was on the counter)
- 1 cup water (if sauce becomes too thick)
- raw Baby Spinach
- Pop everything except the spinach in the crockpot and stir well to coat.
- If the chicken is frozen, start earlier and run for a few hours on high then turn to low until dinner.
- For fresh chicken, start on high and bring to simmer and then turn to low until and cook until chicken is shreddable texture.
- After a while, it pretty much shreds itself.
- Stir occasionally.
- Minutes before you are ready to serve, stir in the raw baby spinach and allow it to wilt.
- Serve over rice.
- (It might also taste good served on a nice roll, like a sloppy joe).
