Chicken and Spinach Crockpot

  1. Pop everything except the spinach in the crockpot and stir well to coat.
  2. If the chicken is frozen, start earlier and run for a few hours on high then turn to low until dinner.
  3. For fresh chicken, start on high and bring to simmer and then turn to low until and cook until chicken is shreddable texture.
  4. After a while, it pretty much shreds itself.
  5. Stir occasionally.
  6. Minutes before you are ready to serve, stir in the raw baby spinach and allow it to wilt.
  7. Serve over rice.
  8. (It might also taste good served on a nice roll, like a sloppy joe).
