Bs Blueberry Pie
- 4 12 cups frozen blueberries
- 1 lemon, juice of
- 1 refrigerated pie crust
- 1 12 cups sugar
- 14 cup all-purpose flour
- 14 cup whole wheat flour
- 18 teaspoon salt
- 2 tablespoons butter or 2 tablespoons margarine
- 1 12 large eggs, lightly beaten
- 2 teaspoons sugar (raw)
- Place blueberries into a large mixing bowl.
- Squeeze lemon juice (1 lemon) over the berries.
- Pour 1 1/2 cups sugar over the blueberries and mix slightly.
- Add 1/2 cup of flour (mix lightly).
- Sprinkle salt over the berries.
- FIT pie crust in a 9-inch pie plate.
- Pour berry mixture into pastry shell, and dot with butter.
- FIT the other 1/2 pie crust over filling, seal and trim off any overhang.
- Cut slits in top of crust.
- Brush top of pastry with beaten eggs (be generous).
- Sprinkle unbaked pie with 2 teaspoons sugar (raw).
- BAKE at 400F for 35 minutes or until golden.
