German Rye Bread(If You Like Dark Rye Bread, This Is The Recipe For You.)
- 4 c. rye flour
- 1/2 c. cocoa
- 2 1/2 Tbsp. dry yeast
- 3 c. warm water
- 1/2 c. molasses
- 1 Tbsp. salt
- 4 Tbsp. caraway seed
- 1/4 c. butter or margarine
- 2 1/2 c. white flour
- 2 1/2 c. whole wheat flour
- Dissolve yeast in 1 cup water.
- Mix rest of water with molasses and salt in a large bowl.
- Mix rye flour, cocoa and caraway seed together.
- Add yeast and melted butter and 1/2 of the flour.
- Beat until smooth.
- Knead in remaining flour until smooth and elastic.
- Cover and let rise until double.
- Punch down.
- Shape into loaves and let rise again until double.
- Bake for 35 to 40 minutes at 375u0b0.
- Makes 2 loaves.
