Fish Fillets with Mediterranean Salsa

  1. Heat oven to 400 degrees F.
  2. Combine first 6 ingredients.
  3. Place 1 fish fillet on centre of each 4 large sheets heavy-duty foil; top with olive mixture.
  4. Bring up foil sides.
  5. Double fold top and ends to seal each packet, leaving room for heat circulation inside.
  6. Place in 17x11-1/2x3/4-inch pan.
  7. Bake 15 min.
  8. or until fish flakes easily with fork.
  9. Cut silts in foil to release steam before opening each packet; top with cheese.
  10. Serve with rice.
