Amazing coffee and walnut cake
- 125 grams butter
- 125 grams caster sugar
- 2 eggs
- 125 grams self-raising flour
- 1 tsp baking powder
- 3 tbsp coffee granules in 100mls water
- 100 grams walnut halves
- 200 grams butter
- 300 grams icing sugar
- Preheat the oven to 170C.
- Then line 2 equal tins with baking parchment.
- Beat the butter and sugar together then add the eggs, flour and baking powder.
- Next beat in 2 tbsp of coffee granules, the rest for the icing.
- Gently stir in 50 grams of your walnuts snapping as you drop into the bowl.
- Cook for 18-25 mins at 170C or 338f.
- FOR THE ICING:
- Beat the butter until soft then beat in your icing sugar followed by the remaining coffee granules.
- Once the cake has cooled ice and then decorate with any remaining walnuts.
