Herbed Oatmeal Bread

  1. *Heat the honey until it's liquefied.
  2. **Dried herbs such as tarragon, thyme and marjoram.
  3. Grease a 9 x 5 inch loaf pan.
  4. In large mixing bowl, combine flours, oats, baking powder and salt.
  5. In a smaller, separate bowl, whisk together egg, honey and buttermilk until well blended.
  6. Stir in caraway seeds and herbs.
  7. Pour all at once over dry ingredients; blend together with a wooden spoon or spatula until evenly combined.
  8. Pour into prepared pan; brush top with melted butter.
  9. Bake at 350F (180C) for 50 minutes, or until toothpick inserted in center comes out clean.
  10. Cool slightly in pan, then turn onto a wire rack.
  11. Bread freezes well.
  12. To vary, add 1 tablespoon minced, sauteed onion; chopped, cooked bacon; or grated Cheddar cheese.
