Simply Stuffed Bell Peppers

  1. Preheat oven to 350
  2. Chop onion and mushrooms ahead of time.
  3. Heat large pan with oil on med to med high.
  4. Add onion, then muchrooms.
  5. Sauteed for about 7 min.
  6. Add meat.
  7. Cook until meat is done, season well with pepper and salt of your choice.
  8. I put 2 pounds of meat for the meat lovers, but 1 to 1.5 will do.
  9. Don't get skimpy on this part.
  10. Cook the quinoa according to the directions.
  11. Use broth instead of water as there is so much more flavor this way.
  12. If the meat mixture is done, turn off the heat until you add the quinoa.
  13. Mix everything together then stuff the peppers.
  14. Add cheese to the meat mixture too.
  15. Bake for 45 min covered.
  16. This will soften the peppers as they cook.
  17. Cook uncovered for additional 15 after you've topped them with cheese.
  18. Viola!
