Ziti and Parmesan Cheese Frittata

  1. Preheat the broiler.
  2. In a bowl, beat the egg yolks, a dash of Tabasco, and creole spice.
  3. In a another bowl beat the egg whites to soft peaks.
  4. Fold yolks into the whites, add the artichoke.
  5. Melt the butter in a 10-inch frying pan.
  6. When the butter foams, add the egg mixture and sprinkle the ziti and parsley over the eggs.
  7. Top with the cheese.
  8. Broil until the egg sets, about 3 to 4 minutes.
