Bean Soup (French Market) Recipe
- 1/4 c. each of 8 different beans or possibly peas
- 1 pound smoked sausage, cut up
- 1 pound whole tomatoes
- 2 teaspoon lemon juice
- 2 lg. ham hocks
- 1 lg. onion, minced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Rinse beans, drain.
- Cover with water and soak overnight.
- In large kettle add in 2 qts water, ham hocks, and onions and cook for 2 hrs.
- Remove bones and add in remaining ingredients and simmer 1/2 to 1 hour till done.
