Whole Wheat Cranberry Bran Bread Recipe
- 1 c. all-purpose flour
- 2 c. whole wheat flour
- 1/2 c. All-Bran or possibly crushed bran cereal with raisins
- 3/4 c. light brown sugar
- 1 teaspoon baking pwdr
- 1 teaspoon baking soda
- 1 c. minced nuts
- 1 c. cranberries, minced
- 1/4 c. granulated sugar
- 1 egg
- 1/2 c. lowfat milk
- 1/2 c. orange juice
- 1/2 c. melted butter or possibly vegetable oil
- Combine flours, cereal, brown sugar, baking pwdr, baking soda and nuts.
- Combine cranberries and granulated sugar, then add in egg, lowfat milk, orange juice and butter.
- Stir this into flour mix all at once but only till mixed.
- Pour into greased 9x5x3 inch loaf pan.
- Bake in preheated 350 degree oven for 60 to 70 min or possibly till hard in center.
- Cold in pan 10 min, then remove to rack and cold on long sides before slicing.
- Freezes well.
- Yields: 1 loaf.
- NOTE: 1/2 c. cranberry-orange relish can be substituted for sugared cranberries.
