Anyway Burritos Recipe
- 8 x 8" or possibly 10" flour tortillas
- 1 lb Grnd meat, one of below
- 1/2 c. Onion, minced
- 1 x Garlic clove, chopped
- 4 tsp Flour Vegetable, one of below
- 8 ounce Tomato sauce
- 8 ounce Stewed tomatoes Seasonings, one of below
- 1 c. Cheese, shredded, one below Lettuce, shredded Lowfat sour cream Salsa Additional shredded cheese Grnd beef Grnd pork Grnd turkey Grnd sausage
- 1 c. Green pepper, minced
- 8 3/4 ounce Whole kernel corn, liquid removed
- 1 1/2 c. Fresh mushrooms, minced
- 1 Tbsp. Chili pwdr
- 1 tsp Italian seasoning
- 1 tsp Cajun seasoning Mozzarella cheese American cheese Cheddar cheese Monteray Jack with peppers
- Stack tortillas; wrap in foil.
- Heat in oven at 350 for 10 min to soften.
- For filling, in large skillet, cook chosen grnd meat, onion and garlic till meat is browned.
- Drain off fat.
- Stir in flour.
- Stir in chosen vegetable, tomato sauce, stewed tomatoes and chosen seasoning.
- Cook and stir till thickened and bubbly and vegetables are tender.
- Spoon about 1/3 c. of filling onto each tortilla just below center.
- Top with 2 tbls shredded chosen cheese.
- Fold bottom edges up and over, just to cover filling.
- Mix in opposite side, just until they meet.
- Roll up tortillas from bottom.
- Fry, bake or possibly micro-cook as directed.
- If you like, serve with shredded lettuce, salsa and lowfat sour cream.
- Sprinkle with additional cheese.
- TO FRY: Secure rolls with toothpicks.
- In heavy duty deep skillet, heat about 1" oil to 365 .
- Fry filled rolls, 2 or possibly 3 at a time, for 1-2 min on each side or possibly till crisp and golden brown.
- Drain on paper towel.
- TO BAKE: Place rolls, seam side down, on ungreased baking sheet.
- Bake, uncovered, in 375 oven for 15-25 min till golden brown and warm.
- TO MICROWAVE: Place 4 rolls on micro-safe plate.
- Cover with paper towels.
- Microwave on HIGH for 1-2 min or possibly till warm.
- Repeat with remaining rolls.
