Sweet & Salty Zucchini Bacon Pasta

  1. Before you start actually cooking, prep your ingredients.
  2. Put a pot of water on to boil the pasta.
  3. Make and crumble your bacon.
  4. Grate your Parmesan cheese.
  5. Next, grate/shred the zucchini.
  6. I used the largest grating side on my 4-sided grater.

  8. Mince the head of garlic (an entire head, not just a clove).
  9. Using a garlic press is the most effective way to get it done quickly.
  10. Now, heat a saute pan (larger than a normal frying pan) and saute the garlic for a few minutes in the olive oil.
  11. Then add the zucchini and stir frequently for 10-15 minutes until soft and sweet.
  12. Add more oil, salt, and pepper to taste.
  13. Meanwhile, cook the pasta according to package directions.
  14. If you can, time the pasta so it finishes within a minute or two of the zucchini.
  15. Angel hair is thin so it should take about 6-7 minutes to cook.
  16. After draining it, put the pasta back in the pot and add the zucchini/garlic mixture, the bacon and the Parmesan.
  17. Stir well.
  18. Serve on a plate (there is no sauce so if you serve it in a bowl, the bacon and zucchini sink to the bottom.)
  19. This recipe can easily be altered to your liking.
  20. Add more or less garlic, zucchini, pasta, bacon, cheese.
  21. Or even add something else that you like!
  22. My pasta and bacon are on the high end because they are my favorite.
  23. You could go to 4 ounces of pasta and 4 pieces of bacon if youre not as extreme.
  24. Serves 2 with huge servings or 4 with smaller servings.
