Sweet & Salty Zucchini Bacon Pasta
- 6 pieces Cooked Bacon, Crumbled
- 4 whole Average-sized Zucchini
- 1 whole Head Of Garlic, Minced
- 1 Tablespoon Olive Oil
- 6 ounces, weight Uncooked Angel Hair Pasta
- 1/4 cups Parmesan Cheese, Grated
- Salt and Pepper, to taste
- Before you start actually cooking, prep your ingredients.
- Put a pot of water on to boil the pasta.
- Make and crumble your bacon.
- Grate your Parmesan cheese.
- Next, grate/shred the zucchini.
- I used the largest grating side on my 4-sided grater.

- Mince the head of garlic (an entire head, not just a clove).
- Using a garlic press is the most effective way to get it done quickly.
- Now, heat a saute pan (larger than a normal frying pan) and saute the garlic for a few minutes in the olive oil.
- Then add the zucchini and stir frequently for 10-15 minutes until soft and sweet.
- Add more oil, salt, and pepper to taste.
- Meanwhile, cook the pasta according to package directions.
- If you can, time the pasta so it finishes within a minute or two of the zucchini.
- Angel hair is thin so it should take about 6-7 minutes to cook.
- After draining it, put the pasta back in the pot and add the zucchini/garlic mixture, the bacon and the Parmesan.
- Stir well.
- Serve on a plate (there is no sauce so if you serve it in a bowl, the bacon and zucchini sink to the bottom.)
- This recipe can easily be altered to your liking.
- Add more or less garlic, zucchini, pasta, bacon, cheese.
- Or even add something else that you like!
- My pasta and bacon are on the high end because they are my favorite.
- You could go to 4 ounces of pasta and 4 pieces of bacon if youre not as extreme.
- Serves 2 with huge servings or 4 with smaller servings.
