Italian Pasta Salad

• 250 g pasta, cooked and drained
• 150 g cherry tomatoes, cut into quarters
• 50 g pine nuts, roasted
• 200 g mozzarella cheese, cut into small cubes
• 150 g rocket, washed and drained
• salt
• pepper
• 3 teaspoons pesto sauce
• 3 tablespoons balsamic vinegar
• 90 ml olive oil
• 1 garlic clove, minced
• 1 teaspoon honey
• 1 teaspoon mustard

1. Mix together the pasta, tomatoes, pine nuts, mozzarella and rocket.
2. Season with salt and pepper.
3. For the salad dressing, mix together the pesto, vinegar, oil, garlic, honey and mustard until well combined.
4. Pour the dressing over the salad and toss gently.
