Apricot Carrot Bread *

  1. Preheat oven to 350u0b0.
  2. Spray 8 x 4 x 2-inch loaf pan with cooking spray.
  3. In large mixing bowl, combine flour, baking powder, baking soda and salt.
  4. In medium size bowl, combine beaten egg, sugar, applesauce, carrots and vegetable oil.
  5. Add all at once to dry ingredients; stir just until moistened (batter will be thick).
  6. Fold in apricots.
  7. Pour batter into pan and bake 45 to 50 minutes or until inserted toothpick comes out clean.
  8. Wrap loaf and store overnight before slicing.
