Pear Pistachio Ginger Bars

  1. Heat oven to 350F.
  2. Line 9-inch square baking pan with aluminum foil, extending foil over edges.
  3. Spray foil with no-stick cooking spray; set aside.
  4. Combine sugar and butter in bowl; beat at medium speed until creamy.
  5. Add eggs, half & half and vanilla; beat until well mixed.
  6. Add flour, baking powder, cinnamon and salt; beat at low speed until well mixed.
  7. Add pears, pistachios and candied ginger; beat until well mixed.
  8. Pour batter into prepared pan; smooth top.
  9. Bake 38-48 minutes or until toothpick inserted into center comes out clean.
  10. Cool completely.
  11. Sprinkle with powdered sugar.
  12. Remove from pan, using foil ends.
  13. Remove foil; cut into bars.
  14. *Substitute dried apples.
  15. **Substitute walnuts.
