Pear Pistachio Ginger Bars
- 1 1/4 cups firmly packed brown sugar
- 3/4 cup Land O Lakes Butter, softened
- 2 Land O Lakes Eggs
- 2 tablespoons Land O Lakes Half & Half or Fat Free Half & Half or milk
- 1 teaspoon vanilla
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3/4 cup dried pears, coarsely chopped*
- 1/2 cup pistachios, coarsely chopped**
- 3 tablespoons chopped candied ginger
- Powdered sugar
- Heat oven to 350F.
- Line 9-inch square baking pan with aluminum foil, extending foil over edges.
- Spray foil with no-stick cooking spray; set aside.
- Combine sugar and butter in bowl; beat at medium speed until creamy.
- Add eggs, half & half and vanilla; beat until well mixed.
- Add flour, baking powder, cinnamon and salt; beat at low speed until well mixed.
- Add pears, pistachios and candied ginger; beat until well mixed.
- Pour batter into prepared pan; smooth top.
- Bake 38-48 minutes or until toothpick inserted into center comes out clean.
- Cool completely.
- Sprinkle with powdered sugar.
- Remove from pan, using foil ends.
- Remove foil; cut into bars.
- *Substitute dried apples.
- **Substitute walnuts.
