Tomato and Parmesan Pasta

  1. Cook the pasta according to package directions but omit any salt the package may call for.
  2. Drain pasta and set aside.
  3. Heat a large nonstick skillet over medium heat.
  4. Add oil to pan and coat.
  5. Add sausage and onion to pan and cook for about 4 minutes, or until onions start to soften and sausage begins to cook.
  6. Add garlic and cook an additional 2 minutes or until sausage is completely cooked through.
  7. Stir in tomatoes and cook an additional 2 minutes.
  8. Remove from heat and stir in 2 tablespoons Parmesan cheese, salt and pepper.
  9. Sprinkle with the remaining Parmesan cheese and torn basil leaves.
