Tomato and Parmesan Pasta
- 8 ounces, weight Whole Wheat Penne Pasta
- 2 Tablespoons Olive Oil
- 8 ounces, weight Ground Sausage
- 1 Medium Onion, Sliced Vertically
- 4 cloves Garlic, Minced
- 1- 1/4 pound Diced Italian Style Tomatoes
- 6 Tablespoons Grated Parmesan Cheese, Divided
- 1/4 teaspoons Salt
- 18 teaspoons Black Pepper
- 1/4 cups Fresh Torn Basil Leaves
- Cook the pasta according to package directions but omit any salt the package may call for.
- Drain pasta and set aside.
- Heat a large nonstick skillet over medium heat.
- Add oil to pan and coat.
- Add sausage and onion to pan and cook for about 4 minutes, or until onions start to soften and sausage begins to cook.
- Add garlic and cook an additional 2 minutes or until sausage is completely cooked through.
- Stir in tomatoes and cook an additional 2 minutes.
- Remove from heat and stir in 2 tablespoons Parmesan cheese, salt and pepper.
- Sprinkle with the remaining Parmesan cheese and torn basil leaves.
