Cheese Tortellini With Corn Scallion Sauce
- 1 teaspoon unsalted butter
- 1 teaspoon olive oil
- 13 cup green onion, cut crosswise into 1/2 -inch pieces (about 2)
- 34 cup fresh corn (or frozen)
- 14 cup buttermilk
- 14 cup corn broth or 14 cup vegetable broth or 14 cup water
- 5 ounces frozen cheese tortellini (about 30 tortellini)
- salt & freshly ground black pepper
- 1 tablespoon parmesan cheese, freshly grated (optional)
- In a medium skillet, combine butter and oil, heat over medium high heat; once butter begins to foam, add green onions and corn.
- Cook, stirring frequently, until the corn intensifies in color, about 2 minutes.
- Add the buttermilk and corn broth; bring to a boil, add tortellini and toss.
- Cover and reduce heat to medium; cook 4 minutes, stirring once or twice.
- Remove from heat, season with salt and pepper to taste, and garnish with Parmesan cheese, if desired.
