Minted Vegetable Salad

  1. Place onion in large bowl.
  2. Sprinkle lightly with salt and toss to combine.
  3. Let stand 10 minutes.
  4. Mix in tomatoes, bell peppers, cucumber, parsley and mint.
  5. Drizzle olive oil and lemon juice over.
  6. Toss vegetables with dressing to coat.
  7. Season salad to taste with salt and pepper and serve.
