Creamy Holiday Lemon Cups

  1. Stir boiling water into gelatin in large bowl 2 minutes or until completely dissolved.
  2. Stir in cold water.
  3. Cool to room temperature.
  4. Pour milk into another bowl.
  5. Add pudding mix.
  6. Beat with wire whisk 30 seconds.
  7. Immediately stir into cooled gelatin until smooth.
  8. Stir in rum extract and nutmeg.
  9. Refrigerate about 1 1/4 hours or until slightly thickened.
  10. Stir in whipped topping with wire whisk until smooth and creamy.
  11. Pour into 10 individual dessert dishes or drinking mugs.
  12. Refrigerate 4 hours or until firm.
  13. Garnish with additional whipped topping and sprinkle with additional ground nutmeg just before serving.
