Creamy Holiday Lemon Cups
- 2 cups boiling water
- 8 serving size jello lemon flavor gelatin
- 12 cup cold water
- 1 12 cups cold milk
- 4 serving size jello vanilla flavor instant pudding
- 2 teaspoons rum extract
- 12 teaspoon ground nutmeg
- 2 cups COOL WHIP Whipped Topping, thawed
- Stir boiling water into gelatin in large bowl 2 minutes or until completely dissolved.
- Stir in cold water.
- Cool to room temperature.
- Pour milk into another bowl.
- Add pudding mix.
- Beat with wire whisk 30 seconds.
- Immediately stir into cooled gelatin until smooth.
- Stir in rum extract and nutmeg.
- Refrigerate about 1 1/4 hours or until slightly thickened.
- Stir in whipped topping with wire whisk until smooth and creamy.
- Pour into 10 individual dessert dishes or drinking mugs.
- Refrigerate 4 hours or until firm.
- Garnish with additional whipped topping and sprinkle with additional ground nutmeg just before serving.
